Cherry Dr. Pepper Ribs Recipe | Traeger Pellet Grill | Heath Riles



My wife requested that I make these ribs. As a man who believes the term “happy wife, happy life” I started on them right away. Plus, if I’m honest, I never miss a chance to chow down on some delicious, savory ribs. This recipe is simple and packs a mouthwatering flavor you’re going to love.

INGREDIENTS:
• Cheshire Pork St. Louis Ribs
• Mustard (or binder of choice)
• Heath Riles BBQ Hot BBQ Rub
• Heath Riles BBQ Cherry Rub
• Heath Riles BBQ Butter Bath (1/4 cup per slab)
• Apple Juice (3/4 cup per slab)
• Dr. Pepper (12 oz for sauce, extra if you plan to spritz with it also)
• Heath Riles BBQ Sweet BBQ Sauce (1/2 bottle for sauce)

DIRECTIONS:
1. Get pellet grill (or grill of choice) up to 250º, we used the new Royal Oak Charcoal Pellets for this cook.
2. Trim ribs to your liking.
3. Apply binder to rib if you wish, we used yellow mustard.
4. Season back side of rib with a light to medium coat of Heath Riles BBQ Hot BBQ Rub.
5. Season back side of rib with Heath Riles BBQ Cherry Rub.
6. Allow rib to rest / sweat for 10 minutes on this side.
7. Repeat steps 3-6 for front side of the ribs.
8. Place ribs on the grill and allow to cook for 2 hours.
9. After 2 hour mark, spritz with Dr. Pepper.
10. Allow ribs to cook an additional hour (total of 3 hours at this point) and remove to wrap with Heath Riles BBQ Butter Bath.
11. Wrap each slab of rib with Heath Riles BBQ Butter Bath mixture (1/4 cup of Butter Bath to 3/4 cup of Apple Juice per slab of ribs).
12. Return wrapped ribs to grill for about another hour and a half or until you get a temperature of around 204º-206º.
13. Remove ribs from grill once desired temperature is reached and allow them to rest for at least 10 minutes.
14. Once rested, brush both sides of the ribs with Dr. Pepper Sweet BBQ Sauce. For this sauce we just reduced 12 oz of Dr. Pepper down over heat and mixed with 1/2 bottle of Heath Riles BBQ Sweet BBQ Sauce.
15. Return sauced ribs to the grill for 20-30 minutes to allow sauce to set.
16. ENJOY!

  4. Did you prefer cooking at 250 vs 275? Cook time increased quite a bit, but was it worth the extra time compared to 275? Love your products, you and Malcom got me into smoking meats.

  11. Heath do let the ribs rest in the butter bath for 15 mins prior to saucing and returning to the grill to set the sauce?

  12. yum!! a question. i dont use a traeger but a master built. I cook my ribs at 225 for 6 hours and they are not pulling apart, the bones just dont pull out. what am i doing wrong? My method is just throw them on the mb, dont wrap them. could this be the issue?

  13. Just tried the ribs you demo'd at 275 degrees. I have a Traeger and the 2-1-1/2 hour times came out perfect, and I unwrapped them at 206. I thought they were too tender at first, but they did firm up as you said they would during the saucing period. My question is why would you ever cook at 250 when you can obtain the same result at 275? Do you need more time with cherry? Mine didn't seam to be lacking in smoke flavor, and had a good ring. I used a mix of cherry, hickory, and maple. Thanks Heath I enjoy the videos and the products.
