RECIPE:
1-2 fresh zucchini peeled & diced
1-2 fresh yellow squash peeled & diced
1 cup diced red onion
1.5 tablespoon cumin
1.5 tablespoon chili powder
2 cans black beans
2 cans red enchilada sauce
4 cups shredded cheddar cheese
fresh cilantro for topping
INSTRUCTIONS:
1. Sautee onion, zucchini, and squash in olive oil. After about a minute add cumin & chili powder and sautee until the onions are starting to get translucent & veggies are softening up a little. Drain & rinse the black beans and stir into the mixture
2. Fill flour tortillas with the mixture & add a little cheese. Roll up and put seam side down into a baking dish (I dump a half can to a can of enchilada sauce on the bottom of the baking dish first)
3. Fill baking dish with enchiladas and then cover them in enchilada sauce & top with cheese
4. Bake in a 350 degree preheated oven for about 30 mins. Take out when finished and top with fresh cilantro if desired!
