Quick & Easy Spicy Aglio Olio
Serves 2
Ingredients
• 200g raw pasta
• 5 clove garlic sliced
• 3 pieces fresh red chili or to taste
• 1 tsp chili flakes or to taste
• Handful of fresh italian parsley. Here i use cilantro for a twist
• Salt and pepper to taste
• 100ml chicken stock or as needed
• 100ml pasta water
• Olive oil as required
Method
• In a pot of boiling water + salt and olive oil.
• Cook for 6mins or according to packaging instruction. Sieve and set aside some pasta water.
• In a pan, add olive oil, garlic, chili flakes, fresh chili to saute a medium heat until garlic is lightly brown.
• Add pasta, chicken stock and pasta water to cook.
• Finish with fresh parsley, salt and pepper. Drizzle extra dash of olive oil.
• Serve hot
Chef tips
1. Pasta water is very useful. Use them to thicken the mixture.
2. Do not overcook the pasta. We want al dente which means to the bite. With a nice texture. I usually cook half of the time as stated on the packaging and adjust the consistency as I cook.
