New Mexico Hatch Green Chile Sauce š¶:
-7 Hatch green chiliās
-3 jalapenĢos
-2 Serano
-3 garlic cloves
– Salt to taste

Wash all of your peppers and cut the tops off. Throw everything into a pot with about a inch of water. Boil for 20 mins with the lid on. Save water but put everything into the blender. Blend until smooth and your sauce can coat the back of a spoon. If your sauce is thick add in a little bit of water and blend again. Add in salt to taste.

No tomatillos?
Curious. Wouldnāt you want to roast the peppers first to get that bump in flavor and spice?
My Dad was from Hatch as are many family members. Their green chili recipes made "to die for" chili sauce. Roasting is how's it done, in a broiler, or outside cooker. Where the pork? Who has an original Hatch chili recipe?
Try some chicken bouillon will really boost the flavor
