How to Make a Simple Yellow Rice with Chicken Recipe

A very simple and delicious yellow rice recipe with just a few ingredients. An alternative to the Puerto Rican yellow rice with chicken, not requiring mini-sweet peppers and culantro.

Ingredients
2-Cups (more or less) of boneless and skinless chicken pieces
Salt and ground black pepper
1-diced small onion
3 or 4 minced or mashed garlic cloves
½ – Red bell pepper (if all you have is green, yellow, or orange.. use it)
1 tablespoon olive oil to brown the chicken
3 cups small grain white rice (rinsed)
3-1/2 (approximately) cups chicken broth or stock (enough to cover the rice)
1 teaspoon chili powder (mild, not spicy-hot)

1. Cut chicken in bite pieces and season with salt and ground black pepper.
2. Heat the olive oil in a casserole or pan big enough to make the rice.
3. Add to the hot oil the chicken and brown until fully cooked.
4. Add to the chicken the onion, bell pepper, and garlic.
5. Once the onions are soft, rinse the rice and add to the chicken and onion mixture.
6. Mix the rice well and let it cook for 2 or 3 minutes stirring constantly.
7. Add chicken broth enough to cover the rice completely.
8. Add the teaspoon of chili powder and mix well.
9. Taste and add salt if necessary (no more than a teaspoon).
10. Stir the rice and lower the temperature of your stove to medium-low.
11. Cover the rice and let it soak the liquid.
12. Once you don’t see liquid on top of the rice, uncover, and stir well.
13. Lower the temperature to low.
14. Cook rice for about 30 to 40 minutes.
15. Stir rice before serving. Enjoy.
