When you’re depressed, cooking can be too much to handle, so you can end up eating low-quality food that isn’t interesting or nutritious. Here’s the first video in our new series of recipes that are easy and tasty.
Chili Recipe:
1 or 2 cans of prepared chili (try 2 the first time)
1 or 2 cans of diced tomatoes (the number of cans depends on how much you like tomatoes)
1 can of corn
1 Tablespoon of chili powder
Optional:
1 can of beans (kidney, black or pinto)
1 can of garbanzo beans
1 Tablespoon of minced garlic
1/2 Tablespoon of powdered cumin
1/2 Tablespoon of hot sauce
Open all cans and put in a (minimum) 2-quart microwavable dish, draining liquid from corn and beans (if you add them) into the sink. Mix all of the ingredients together thoroughly. Cover with plastic wrap and microwave for 10 minutes at 50% power.
Top with shredded cheddar or sour cream (or both) if desired.
