White chicken chili is a delicious and flavorful dish with a unique taste profile. It is creamy, slightly spicy, and refreshing all at the same time. A great option for colder autumn days while also invoking memories of the passing summer.
It is my first time I ever tried white chicken chili and I do not want to miss it anymore. A versatile, tasty and easy-to-make dish. Moreover, it is also rather healthy, if you go easy on the cream. Enjoy!
INGREDIENTS
– 15 gram canola oil
– 600 gram chicken breast, raw, skinless
– 1 medium onion
– 200 gram red bell pepper
– (optional) a few spicy chili of your choice
– 4 garlic cloves
– ground coriander [1tsp / 2 gram]
– ground cumin [1 Tbsp / 6 gram]
– ground smoked chili [1tsp / 2 gram]
– half teaspoon dried oregano
– 3 cups chicken stock [750 ml]
– 500 gram canned white beans, e.g. Cannellini [rinsed & drained]
– 200 gram canned corn
This white chicken chili recipe yields 5 servings. 380kcal with 35g of carbohydrates, 10g of fat and 40g of protein per serving (without toppings).
