I see a lot of recipes for dump and go crockpot meals, dump and go casseroles, dump and go instant pot recipes…but let’s not forget dump and go one pot meals. They are so quick and so easy, great weeknight meals, this dump and go makes a perfect Fall meal! Here’s how I made it:
1 green bell pepper
2 jalapenos (optional)
1 cherry bomb pepper (optional)
1 large onion (I used 3 small)
3-4 cloves garlic
4-5 celery stalks
(adjust the above quantities to your preference, I love a lot of veg in my chili!)
2 T bacon grease or olive oil
1 lb ground beef
salt and pepper to taste
2 15-oz cans stewed tomatoes (or 10 fresh)
1 15-oz can kidney beans (I use dark red)
2 T chili powder
1 t cumin
1 T sugar
Simmer on very low heat for one to two hours, stirring occasionally. Top with shredded cheese, sour cream, and fresh chopped cilantro.
