This is an old recipe that I have developed over the years and I thought I’d share my latest version. Enjoy!
Kenās Red Chili
Ingredients:
3 pounds of Ground Beef
1 ā 1 1/2 of Stew meat
1 Can of Brooks Chili Mix
1 ā 15oz. can of Tomato Sauce
1 can of Rotel Original
Spicy V-8 (top off pot with this. You wonāt use it all)
Salt, Pepper & Garlic (SPG)
1 ā 2oz. Chili Powder
Red Chili Flake to taste
Cayenne Pepper to taste
Cherry wood chunks for smoking (Optional)
If adding cherry smoke, I suggest smoking only the stew meat. Otherwise, it can get too smokey⦠Just my opinion. Otherwise⦠Brown the ground beef along with the stew meat. Drain off the fat.
Add all ingredient except the Spicy V-8. Mix well and top off the pot with the V-8. Let the chili simmer in the pot for about an hour, stirring occasionally. Enjoy!
