KrazyKAT’s Spicy Thai Eggplant Pepper



12 Thai eggplant

2 Tbsp. chopped garlic

1 stalk of lemon grass

5 kaffir lime leaves

20 fresh, chopped Thai chili peppers

5 Tbsp. cooking oil

1 Tbsp. MSG *optional *

1 tsp. granulated chicken bouillon

3 Tbsp. Padek ( Lao fermented fish sauce) or

  3. Can we use purple eggplant to make this pepper sauce too or will it taste different?

  4. Thank you for this recipe – it combines so many of my favourite Thai ingredients. I am not sure I will be able to find Padek. Is there a possible substitute?
