Taco Sundae Soup Recipe
Ingredients:
Taco Meat Layer:
1 lb ground beef or turkey
1 packet taco seasoning
1 can black beans, drained and rinsed
1 cup corn kernels
Chocolate Sauce Broth:
3 cups beef broth
3 tbsp unsweetened cocoa powder
2 tbsp honey or agave nectar
1 tsp chili powder
1/4 tsp cinnamon
Salt, to taste
Sundae Toppings:
1 cup shredded cheddar cheese
1 avocado, diced
1 tomato, diced
1/2 cup crushed tortilla chips
Whipped cream (yes, you read that right)
Maraschino cherries, for garnish
Instructions:
Taco Meat Layer:
In a large skillet, cook the ground beef or turkey over medium heat until browned.
Drain the fat and add the taco seasoning, following the package’s instructions.
Add in the black beans and corn and cook until heated through. Set aside.
Chocolate Sauce Broth:
In a saucepan, heat the beef broth over medium heat.
Whisk in the cocoa powder until fully combined.
Stir in honey, chili powder, and cinnamon. Season with salt to taste. Allow it to simmer for 10 minutes, then remove from heat.
Assembly:
In individual serving bowls, layer the taco meat at the bottom.
Pour the chocolate sauce broth over the taco meat, covering it.
Sprinkle a handful of cheddar cheese over the broth while it’s hot so it melts slightly.
Add a few dollops of whipped cream on top, and scatter the diced avocado, tomato, and crushed tortilla chips.
Finish with a maraschino cherry on top!

Oh, I get it! I wondered how the ice cream would work! LOL! Looking at the recipe, leave out the cocoa, honey, whipped cream, cherry and maybe the cinnamon and it would be lovely.
Let's just replace that whipped cream with some sour cream or maybe a dollop of yogurt😂. Seriously, all you needed was 🧅 I need to make it perfect.
Dave, you should not have used whipped cream. Sour cream would have been much better. And 1 Tbls of cocoa powder is good. I use cocoa party in my chili. And 1/2 the cinnamon. But DEFINITELY NO whipped cream. Sour cream and leave off the cherry. Use the tomato for the red cherry effect. But I’m going to try it bc it sounds good. Also I might have used crushed chips as garnish under sour cream. Otherwise it gets soggy in the broth “topping”. PLZ try it again. I promise it will be great
Oh Dave you crack me up with your analogies…. Avocado cut long ways not in half, get pit out either with a spoon or knife, score the Avocado in whatever size you want, then with a big spoon scoop out…. Got it GOOD OH WATCH YOUR FINGERS

This looks interesting I would replace the whip cream with mashed potatoes and instead of chocolate broth I would use beef broth

That's funny because I make a roasted chicken enchilada soup. First you roast chicken in the oven, let cool & shred it or dice it. Set aside.
In a stock pot add onions & garlic, saute. Add low sodium chicken stock, 1 can of green enchilada sauce, cilantro and black olives (optional cuz you don't care for them.) I add a few seasonings to my liking and let it simmer for a while. Add the chicken and all juices to the pot and heat thru. Serve with your favorite toppings like sour cream, shredded cheese or tortilla chips.
I've never seen anybody cut an avocado the way you did. I usually go the opposite direction from skinny top to fat bottom and go around and then twist it and the pit ends up on one side and then you can pull the peel off and slice it.

Ok…the meat, beans, corn mixture with the sauce looked totally like diarrhea. When my kids were younger they’d say to their kernels of corn before a bite…see you tomorrow, corn! I just couldn’t get past my thoughts. Totally on me, nothing against you, Dave. 😉
