INGREDIENTS
• 2 cup Red Onion (Chopped)
• 1 ½ cup Carrot (Chopped)
• 1 ½ cup Celery (Chopped)
• 1 ½ cup Red Bell Pepper (Chopped)
• 1 ½ cup Green Pepper (Chopped)
• 5 Cloves Garlic (Finely chopped)
• 800 grams Lean Ground Beef
• 3 tbsp Tomato Paste
• Salt and ground pepper (to taste)
• 2 tbsp Dried Smoked Paprika
• 1 tsp Dried Cayenne Pepper (Add more if you like it spicy)
• 1 tbsp Ground Cumin
• 2 tbsp Worcestershire Sauce
• 2 tbsp Maggi Sauce
• 2 tbsp Yellow Mustard
• 2 tbsp Dried Oregano
• 1 tbsp Dried Thyme
• 800 ml Diced Tomatoes
• 700 ml Tomato Sauce
• 500 ml Pinto Beans
• 500 ml Kidney Beans
• 500 ml Navy Beans
• 3 Bay Leaves
INSTRUCTIONS
• In a large pot, sauté the onion for 5 minutes or until it is nice and translucent over medium-high heat.
• Add chopped carrot and celery and cook until they are tender.
• Add chopped red bell and green pepper and cook for 2 minutes
• Add chopped garlic and cook for a minute
• Brown ground beef. When the beef is almost cooked add tomato paste and season with salt and ground pepper. Stir.
• Add the seasonings: Smoked paprika, cayenne pepper, cumin, Worcestershire, Maggi sauce, yellow mustard, oregano, and thyme. Stir.
• Add diced tomato and tomato sauce and add all the beans.
• Add bay leaves, cover the pot, and allow the chili to simmer over low heat for 2 hours.
• After 2 hours you can adjust the seasoning by adding salt and ground pepper.
