Daal Miloni:
Ingredients;
White lentil 1/4 cup
Split green gram lentil 1/4 cup
Gram lentil 1/4 cup
Red lentil 1/4 cup
Salt to taste
Red chili 1tbsp
Turmeric 1tsp
Garlic 3 cloves
Coriander powder 1 tbsp
Ingredients for Tempering:
Onion sliced 1
Clarified butter 1/2 cup
Whole red chili 4-5
Cumin 1tsp
Green coriander to garnish
Boiled all lentils with spices, cook till done. Add as required water and cook. Give a tempering with tempering ingredients.
Hyderabadi Bhagar Rice:
Basmati rice soaked 2 cups
Oil or Clarified butter 1/4 cup
Cinnamon 1 inch stick
Cardamoms 3 – 4
Cloves 3 – 4
Cumin seeds 1 tsp
shahi cumin 1 tsp
Black peppercorns 1/2 tsp
Bay leaf 1
Star anise 1
Green chilies 2
Onion finely sliced 1
Ginger garlic paste 1 tbsp
Salt to taste
Heat oil onion and all spice. Add ginger garlic paste and green chilies. Add water cook. Add rice and cook with salt and all spice, remove and serve.
Hyderabadi Tamatar Ka Cut:
INGREDIENTS:
Tomatoes boiled 6-8
Whole red chilies 6
Cumin seeds 1 tsp
Soaked gram lentil 1 tsp
Grind above spices with boiled tomatoes.
Ingredients for Bhuna Masala
Cumin seeds 1 tsp
Sesame seeds 2 tbsp
Poppy seeds 2 tbsp
Ingredients for Masala:
Green chilies 4
Red chili powder 1 tbsp
Lemon juice 4 tbsp
Nigella seeds ¼ tsp
Curry leaves 12
Turmeric powder ½ tbsp
Salt to taste
Ingredients for Tempering:
Whole red chili 8
Curry leaves 6
Cumin seeds 1 tbsp
Boiled egg to serve
METHOD:
Blend tomatoes with whole red chilies, cumin and soaked lentil. Grind all ingredients for roasted spices. Cook tomatoes with spices. Add salt and 1 cup of water. Add roasted spices cook. Add all ingredients of spices cook. When it becomes thick remove. Give a bhagar and garnish with eggs, serve. For baghar heat oil add ingredients fry well.
