Here is the recipe to put favorite meal, the vegan chili. We make this twice/monthly on Saturdays and enjoy it for the rest of the week for lunch or dinner, and sometimes breakfast:) Enjoy!
Ingredients
-bell peppers
-1 cup mushrooms
-1 medium onion
-2 zucchini
-1 large turnip (optional)
-1 clove garlic (crushed)
-2-3 table spoons nutritional yeast (or as much as you like)
-2 packs vegan chili seasoning
Cans
-2 small cans hominy
-1 46 fl. Oz tomatoes juice
-2 large cans whole peeled tomatoes (cut them up if you like)
-1 small can black beans
-2 small cans chili beans
1- small can kidney beans
-1 small can lentils
Next, open all legume cans, quick rinse, & set aside.
Cooking
-heat up pot on medium high heat
-add crushed garlic (cook for 30 secs)
-add chopped onions (cook until translucent)
-add the rest of the veggies in whatever order you prefer
-(peppers, turnip, zucchini)
-Let all veggies cook for about 6 mins (then move on to the cans)
-Now, add all washed canned ingredients in no specific order
-finally, add the tomatoes juice and seasonings and let simmer for 15-20 minutes on medium low heat.
Optional: cilantro for garnish and extra nutritional yeast
