We’re taking chili to the next level with a twist on this classic meal, WHITE CHICKEN CHILI! Lower fat, better nutrition, boosts your immune system and is simply delicious.

ONE POT, ONE SPOON WHITE CHICKEN CHILI – AMAZING!

Prep Time: 30 minutes
Cook Time: 3-4 hours (in a crockpot)
Total Time: 4 hours, 30 minutes

Ingredients:

3 teaspoons Vegetable oil
3 medium Onions, chopped
3 teaspoons Salt
¾ teaspoon White pepper
10 cloves fresh Garlic, minced
5 teaspoons ground Cumin
3 teaspoons dried Oregano
2 bunches of fresh Cilantro, divided ā…” & ā…“.
3 JalapeƱos, seeded and fine chopped
6 cups Chicken stock or broth
3 pounds of Chicken, light and dark meat, chopped
4 (15oz) cans of Cannelloni (white kidney) beans, drained and rinsed

Optional ingredients:
2 tablespoons cornstarch
2 tablespoons water
½ cup Milk

Garnish ingredients:
ā…“ cup Cilantro
ā…” cup Cojita Cheese, crumbled
ā…“ cup JalapeƱo, finely chopped
3 Avocados, chopped

INSTRUCTIONS:
Preheat Crockpot on high setting for 30-45 minutes.
Add oil, then onions, and sautƩ for 2-4 minutes or until slightly transparent.
Add salt and white pepper and stir, then add garlic.
Once garlic is fragrant, add chicken and stir. Then add Cumin and Oregano, continue stirring.
Add Chicken stock or broth, jalapeƱo and ā…” of the Cilantro.
Cook for 2 hours or until chicken is cooked through.
Add beans and lower heat until heated through.

Optional:

For slightly thicker chili, mix together cornstarch and water to form a slurry, then stir into chili to thicken. Simmer chili for 20-30minutes more.

Taste for salt and seasonings, adjust if desired.
