Quarantine Cooking: White Chicken Chili (Episode 12)

White chicken chili – delicious and easy

1/2 onion, diced
3 garlic cloves, minced
2 tbsp olive oil
2-3 boneless skinless chicken breasts (crock pot salsa chicken – see previous episode) cooked and shredded
4 cups chicken broth
3-4 cans white beans, drained
2 small cans diced green chilies
2 tbsp chili powder
1 tbsp cumin
salt and pepper to taste
1/4 cup half & half (optional)

Heat olive oil over low/medium heat 1-2 minutes, add onion and cook until translucent. Add garlic, cook addition 2 minutes. Stir in remaining ingredients except for half & half. Simmer 45 minutes. Stir in half & half if desired. Serve your chili with crushed tortilla chips, sour cream, jalapeno slices, cheddar cheese, avocado…Enjoy!
