Thick and Hearty Chili
1Ā small yellow onion, diced
1Ā green bell pepper, diced
2Ā ribs celery, diced
2Ā cloves garlic, minced
2Ā small carrots, thinly sliced
2 Tbsp chili powderĀ
1 tsp cuminĀ
1/2 tsp oregano
1/4 tspĀ cayenne pepper (Optional)Ā
1/2 tsp salt
1Ā 15-ounce can chili beans or red kidney beans drained
1Ā 15-ounce can pinto beans drainedĀ
2Ā 15-ounce cans diced tomatoes
1 cupĀ beef broth (or water)
Optional Toppings:Ā green onions, sour cream, cheese and corn chips
Saute the onion, bell pepper, celery and carrots in 1 Tbsp of oil for 5 to 10 minutes
Add garlic and spices to the pot and saute for 1 minute
Add beans, tomatoes and broth
Cover and cook on low for 15 to 20 minutes
Uncover and cook an additional 10 to 15 minutes until the carrots and celery are tender
Serve with optional topping if wanted

Looks delicious š So cold up here in Michigan. Lots of snow ā snow. MY grand daughter puts a can of corn in her chili. Also l would make some corn bread for eating it the next day .Cook once ,eat twice .š

I love a good hearty Vegetable Chili… I like it with near also. But this is a Great Recipe! I've made it before but without the celery! I also like Kidney Beans in mine!
