Skillet Peppers and Potatoes Recipe



This is one of those simple recipes that inevitably becomes a family favorite, especially for brunch. The recipe suggests bell peppers, but when there are different peppers available, you can replace the bell peppers with sweet banana peppers, gypsy peppers, jalapeño, cayenne, or Calabrian chile peppers.   1. Oooo I'll go to the store, get what I need, and make this for my grandma tonight for dinner (I'm out of potatoes). She'll probably want a piece of sausage with it and leave out the spicy pepper. Thanks Lydia!

  2. My Mom used to make a similar dish. When we lived in the northeast, she used Italian frying peppers. Now I live in NC and they call them cubanelle peppers but they are very hard to find. They are mild and sweet. To this recipe she added a dozen eggs and a cup of grated Romano cheese. Friday, meatless dinner of potatoes, peppers and onions with eggs, served with this frittata type dish and crusty fresh Italian bread. It was my Dad’s favorite so she made sandwiches with the leftovers for his lunch at work. We also had a local family owned pizza restaurant that made subs the same way. Deliziosa! Good memories!

  3. This is a staple breakfast dish for me – just add eggs over-easy and maybe a sausage. Lovely hearty combo to start the day.
