Ingredients:
3 cups all-purpose flour (maida)
¾ tsp salt
3 tbsp cooking oil
1¼ cups warm water (adjust as needed)
500 g ground meat (preferably with some fat)
1 cup chopped onion
2 chopped green chilies
½ cup chopped bell pepper/capsicum
1 tsp chili flakes
1 tsp black pepper
1 tsp roasted cumin
2 tbsp chopped coriander
Instructions:
Prepare the Dough:
In a large bowl, combine the flour, salt, and cooking oil. Gradually add warm water while mixing until a smooth dough forms. Knead well for about 5-6 minutes.
Cover the dough with a damp kitchen towel or a plate and let it rest for 30 minutes or more. This resting time allows the gluten in the dough to relax, making it easier to roll out later.
Cook the Keema:
In a large non-stick pan, add the ground meat. The fat in the meat will be sufficient, so no additional oil is needed.
Add chopped onions and salt. Sauté until the onions are soft and the water from the meat evaporates.
Stir in the chopped green chilies, bell pepper, chili flakes, and black pepper. Cook until the mixture turns dark brown, which develops a rich flavor.
Finally, add the roasted cumin and chopped coriander, mix well, and set aside to cool.
Assemble the Keema Pockets:
Divide the dough into 8 equal parts and form small balls.
Roll out each ball on a floured surface into a thin disc. The trick here is to keep the center slightly thicker than the edges, which will hold the filling better.
Place a portion of the keema mixture on one half of the disc. Be careful not to overfill.
Moisten the edges with a little water, fold over to create a half-moon shape, and press the edges to seal. Trim any excess dough with a knife for a neat finish.
Heat a pan and carefully fry the pockets until coked on both sides.
Serve and Enjoy:
