Slow Cooked Chili Con Carne Recipe

Hi everyone,

Who doesn’t love a good, spicy chili con carne? With this recipe, you will whip up a delicious version of this classic. Only 15 minutes prep time, 6-8 hours in the slow cooker and you’re done. Hope you’ll enjoy!

Ingredients:
500 gram beef mince
1-2 celery sticks chopped
1 large onion chopped
2 bell peppers (red / yellow) sliced
2-3 garlic gloves chopped
1 tsp smoked paprika
2 tsp ground cumin
2 tsp dried oregano
3 tbsp tomato puree
3 tbsp chili paste (or 3+ tbsp dried chili flakes)
400g canned chopped tomatoes
500 ml beef stock
800g black beans
50+ g dark chocolate (at least 70% cocoa)
Sour cream / Rice / tortillas / Pita to serve

Mise en place
– Slice and chop all vegetables & herbs
– Combine celery, onion and peppers in one bowl
– Combine chopped tomatoes, tomato puree, oregano, and chili paste in one bowl
– Combine cumin, garlic and smoked paprika
– Brown the beef

Method
– Brown the mince (no oil needed) and transfer to slow cooker
– In the same pan, fry celery, onion and peppers 5-10 minutes on medium heat
– Add cumin, garlic and smoked paprika and fry for 1-3 minutes. Transfer to slow cooker.
– Add beef stock, chopped tomatoes, tomato puree, oregano, and chili paste to slow cooker. Mix everything in slow cooker and cook on high for about 7 hours
– Add chocolate and beans and stir well, combining everything. Cook in high for 30 more minutes. At the same time prepare whatever you want to serve this with (tortillas / rice / pitas)
– Serve and enjoy!

Tips
– If you have too much, this tastes even better the day afterwards! You can change things up and eat with rice on day one and then have a tortilla for lunch the day after!
