Today will show you another delicious and easy rice recipe for dinner. I will be making chipotle rice. This is similar to the way I make Mexican red rice. The smoky spice for the chipotle in adobo sauce and the butter make this the perfect dinner side. This is gonna be good!

⭐️ Chicken Marinated in Greek Yogurt

INGREDIENTS
1 1/2 Tbsp cooking oil
1 cup of long-grain rice
small piece of onion
1 to 2 cloves of garlic
2 Tbsp unsalted butter
1 to 2 Tbsp diced chipotle peppers in adobo sauce
2 cups of water
1 Tbsp granulated chicken bouillon powder

Okay so i’m going to show you how i make a chipotle rice i’m using the same technique i use to make my spanish or mexican style red rice just the flavor profile is a little different but it’s really tasty and you know you might want to try it and you

Might like it so here we go so Okay so i’m going to crank this up to medium heat here in my preheated pan i’m going to add a little bit of cooking oil and i’m going in with my rice that i pre-rinsed and now i’m going to toast my rice i’m going to toast it until it’s like a

Golden a light golden color okay so my rice is very aromatic right now it smells so good um you can use long grain rice i’m actually using basmati rice today and it’s really my favorite rice quite honestly okay so i’m gonna go in with my fresh onion and just let that saute just

For a little bit this will really make the the oils in the pan and everything in it fragrant with that onion flavor mmm smells good okay going in with my garlic and this is going to go quick i don’t want the garlic to scorch or burn

So give that a quick just a quick mix because the pan and the rice the rice itself has a lot of heat that it holds so it’ll do what it needs to do with the garlic now i’m going in with two tablespoons of unsalted butter and melt that down into the pan

Smells great already I don’t want to constantly stir everything you don’t want any of the rice to kind of burn oh my gosh this smells so good just like this with like chicken stock or broth good rice okay so now i am gonna go in with my chipotle pepper puree i’m going for like a tablespoon

And this is actually just diced i don’t want to say puree but it’s diced and it’s the chipotle peppers in adobo sauce and if you don’t have that diced the jar that’s already diced you can use just one chipotle pepper uh in place of what i’m using oh gosh

This really just it’s my favorite thing i love anything chipotle peppers so good okay crank up the heat just a little bit because we’re gonna want to get this simmering okay going in with my two cups of chicken broth that i created with two cups of water one tablespoon of uh

Chicken bouillon powder the granulated kind going in just give it a quick little stir um because the the granulated chicken bouillon powder has sodium in it i’m not adding any salt now if you are using store bought or homemade chicken broth or stocks that are low sodium or no salt then you’ll

Want to add salt to taste and if you’re adding uh just water or vegetable broth with no salt you want to add like a half teaspoon to a teaspoon of salt it’s really to your preference okay so i’m gonna go and put the lid on here and

Once it comes up to a simmer or a boil i’m going to lower the heat and let it cook for about 15 to 18 minutes over a low heat at a gentle simmer okay so i’m gonna lower the heat now that you see it boiling and simmering

And i want it to cook for an additional um this is actually been going already for about three or four minutes so another 12 to 13 and this rice should be done and i suggest like i always do do not lift the lid and just you know kind

Of watch it that’s kind of why it helps to have a see-through glass lid so you can see what’s going on in there without having to lift it okay so my rice is done i’m going to shut it off by the way it smells amazing

And i’m going to set it aside i still have not lifted the lid and i’m going to let it set with the lid on off the heat for 10 minutes now i’ll probably um i’m not sure what video i’ll post first the rice or what i’m doing also along with the rice

Um and that is going to be a marinated chicken breast and greek yogurt seasonings and spices i’m gonna bake it on a bed of peppers with onion and just be on the lookout for that video i’ll link it below but back to the rice i can’t wait till

This is done so just let it rest 10 minutes okay oh that’s not too bad so it has been 10 minutes sitting here maybe a little longer i’m baking some chicken breast marinated chicken breast again be on the lookout for that recipe video but check out this rice ah it smells so good

  2. Delicious…but please don't say Spanish rice. Chipotle isn't part of the diet in Spain or in Spanish cooking.

  6. I like to use the tomato bullion and funny you said 16-18 minutes cause I been making rice for 50+ years and found that 17 minutes after it boiling and you cover reduce to simmer is absolutely perfect timing. I also and some oregano to mine

  10. This rice is amazing! I was very hesitant to make it because a chipotle pepper is a smoked jalapeno. I wasn't afraid of the bit of heat the jalapeno would bring, I was concerned with the smoke. I thought the smoky flavor would just overpower the rice and it would be too much. But it wasn't! At least not with the tablespoon you put in. There is a very subtle smoke back note but it does not take over. Maybe the butter tames that and in fact even the spiciness of the jalapeno isn't much there. I might put in the full 2 tablespoons next time. I made this rice to have with my first ever attempt at Carne Guisada and it worked perfectly for that. Thank you for an awesome recipe!
