To prepare 6 stuffed peppers, you will need:
Carrots – 2 pieces
Onion – 4 bulbs
Bell peppers – 6 pieces
A pinch of salt and black pepper
Oil – 30ml
Minced meat – 800g
Tomato paste ā 80gr
Rice – 50g
Cream – 400ml
Cut off the top of the bell pepper and remove the seeds from the inside. Chop the onion. Grate the carrots on a coarse grater. Heat the pan over medium heat. Add oil to the pan. SautƩ the onion and carrots for about 7 minutes until golden brown. Add a pinch of salt. Add tomato paste. Mix with onion and carrots and sautƩ in the pan for about 3 minutes.
Take minced meat. I used a mix of pork and beef. Add finely chopped onion, 1/2 teaspoon of salt, and roughly the same amount of black pepper to the minced meat. Add pre-cooked rice. You can slightly undercook the rice; it will finish cooking during the stewing of the bell peppers. Mix the minced meat well.
Fill the cleaned bell peppers with the minced meat mixture. Place the stuffed bell peppers in a pot. Add about 150 ml of water to the bottom of the pot. Arrange the sautƩed carrots and onions in tomato paste over the peppers. Pour low-fat cream on top. I used 15% cream. Stew over low heat for about an hour. Bon appƩtit!
