Pepper Jelly Canning Recipe



In this video Annette Thurmon shows us how to create a fun pepper jelly and uses a waterbath canner for proper storage.

Once you source the list of ingredients supplied by Annette, she suggests that you prep by measuring and cutting ingredients before you begin heating and thoroughly washing your Ball glass jars.

Then, she’ll mix and cook the ingredients and shows us how to tell when the jelly is ready for the canning process.

Once it’s ready she uses a canning funnel to add the jelly to the jar and measures the contents with a headspace tool. Then she removes the bubbles and prepares for the waterbath canning process.

Thank you I’m gonna make a really fun pepper jelly recipe this is delicious with crackers as an appetizer it’s easy to make and I don’t know just one of my go-to’s so once you have all your ingredients you want to make sure you wash your jars your bands your Lids have all those

Ready to go before you start and then prep your ingredients based on what the recipe says and I’ll walk you through the steps I’ve followed the recipe I have everything in my pot and for this recipe you’re going to cook it twice the second time around it really wants you to boil

It hard for three minutes and what that means is to get it boiling so much that it’s rolling like it’s not stopping even when you stir it sometimes when you stir something down it’ll kind of temper it and it goes down and then starts up you want it to just be continuously boiling

For those three minutes so you’ll want to make sure you’re mixing it as well so it doesn’t stick and I’m going to show you here this is boiling so you wanted to continue boiling the whole time like see how this continues to boil and once you’ve done that for

The three minutes it’s ready and you can start filling your jars my jars have been warming in the canner and I am now ready to fill them I will get my jar lifter place it on a towel or wood cutting board use my funnel here and I will start to fill

I’m going to fill this to a 1 4 inch headspace grab your headspace tool look at the 1 4 inch you’re going to go all the way around the jar and ensure the level of that jelly is to the tip of this tool on that 1 4

Level and then we will use our bubble remover to remove any air so you can go down the side pull towards the middle down the side pull towards the middle all the way around I feel like for a jelly everything is a lot more sticky

So you want to make sure to really clean the rim I wet it a little bit wipe all the way around put your lid on we’re going to do fingertip tight so put your band on turn it till it meets resistance and then just tighten it a smidge

We’ll put our jar back in and we’re ready for the next one I have filled all my jars and we are ready to process the jars so I will put the lid on and I will turn the heat up and I’m going to wait for it to boil a hard

Rolling boil because I don’t have a see-through lid I’m going to wait to hear it really going and I’m going to also check and see when it starts to really boil and we are going to then start the processing time when it’s really going on that boil and we’re going to process

This for 10 minutes the 10 minutes has passed for the cooking time I’m going to turn my heat off and I’m going to remove the lid and wait five minutes after those five minutes we’re ready to take out our jars five minutes past here we go we’re going

To take out our jelly place it onto a wood cutting board or a towel and you’re going to leave it for 12 to 24 hours don’t touch it and then we’ll be ready to check for our seal we have completed our delicious pepper jelly recipe which I love after 24 hours

You can check your seal make sure it doesn’t push down everything looks good around the jar you can remove your band take a look it all looks good so that is our delicious pepper jelly recipe there’s a couple things I want to say about jelly recipes

Just to help you if you are looking at a recipe and it says something and you’re not sure what it is at least for me these are a couple things that I needed clarification on so just be aware that there are some recipes that won’t call for added pectin and when that happens

And you’re cooking down your mixture for the jelly you’ll need to know at what point it’s ready to be placed in the jars and canned and so what you do for that is they might say to something like a sheet test and like what in the world

Is that a sheet test and that just means is when you take your spoon and you go into the jelly and you scoop it up if you scoop it up and drop it and it literally just falls off like liquid like little drops it’s not ready it’s

Not thick enough you want it to be cooked down enough that when you scoop it up with a spoon and you turn it it falls off like one sheet instead of like all these little drops so keep that in mind when you are making your jelly and

You have to be like you’re not sure is it ready is it not for a recipe that didn’t call for pectin that is what you can do to know so there’s one recipe that I was making that was for a pear jelly and it asked you to use a strainer because for

The jelly it really just wanted you to use the juice of the pears and I was like well what in the world is a strainer I’ll show you this really fun Contraption you can do this with a cheesecloth but the idea is you’re going to place those

That cooked fruit in this and so over time like a couple hours if not more follow the recipe what it tells you it’s going to strain the juice that liquid coming from the fruit down into the bowl and that’s what you will use for your

Recipe and a note to kind of keep in mind it says you know what I would want to do is just like push it down and get that juice out if you do that it’ll cause your jelly to be cloudy which isn’t necessarily bad but you kind of

Want that clear beautiful jelly if that’s you know you want so just put your food in there let it drip drip drip that is what that is I had no idea I just ordered this it’s nice to have you don’t use it all the time but it’s nice
