**Lemon Pepper Shrimp and Orzo Skillet: How to Make It**
If you’re unfamiliar with orzo, it’s a small pasta resembling rice, perfect for quick weeknight dinners. Its petite size allows for rapid cooking, making it an excellent alternative to rice.
Moreover, this grain is a favorite among both adults and kids. Opt for whole-grain orzo for added B-vitamins and fiber.
**Ingredients:**
– Shrimp: Look for pre-peeled and deveined shrimp, often available in the freezer section.
– Shallots: Prefer shallots for their delicate onion flavor, but yellow or sweet onion works too.
– Garlic: Use at least 4 cloves for the aromatic base, adjusting to your preference.
– Butter: Combine with olive oil to prevent burning and add richness.
– Orzo: Find it in the pasta aisle; use gluten-free pasta or rice for a gluten-free option.
– Broth: Vegetable broth enhances flavor; water is a substitute.
– Veggies: Add spinach or asparagus for extra nutrients and color.
– Lemon: Zest and juice of 1 lemon; caramelize an extra lemon for aesthetics.
– Pepper: One teaspoon of freshly cracked black pepper for a zippy spice.
**Directions:**
1. Sauté shrimp seasoned with ½ tsp. salt and ¼ tsp. black pepper in 1 Tbsp. butter and olive oil over medium heat. Cook shrimp for 3 minutes, flip, and cook an additional minute until opaque. Transfer to a plate and cover to keep warm.
2. In the same skillet, add broth, salt, and pepper. Bring to a boil, then simmer for 10 to 12 minutes until orzo is al dente and most liquid is absorbed.
3. Stir in veggies during the last 3 minutes of orzo cooking. Finally, mix in lemon zest and juice.
4. Nestle shrimp back into the skillet and garnish with fresh parsley.
