This is a recipe that i learned from my mother by watching her cook when i was 10-12 years old. and since i have started working in hotels i have always used this recipe specially for Chinese and Indonesian food. this chili paste can be stored in room temperature and can be used with any food items to make them spicy or simply enjoy with plain rice or even plain boiled vegetables.
HINT: if you cannot find shrimp paste please use prawn shells and heads baked in the oven and grounded. when ever you buy prawns or crabs always keep the shells in the freezer and this can be used for many food items to enhance the flavor. (Soups, Stocks, chili paste)
