Hey guys, try this 20 minutes incredibly easy and versatile vegan chili recipe! Perfect dinner/lunch for a busy day ♥️
Ingredients:
1 can Red beans
1 can tomatoes 🍅 (you can also use tomato sauce or 5-6 fresh tomatoes)
1 big onion 🧅
Garlic powder/ 2 garlic cloves🧄
1 can chickpeas
50 gr quinoa (boil it in advance)
1 can sweet corn 🌽
Some parsley
3 red peppers
Of course some jalapeños and chili flakes 🥵 – depending on how spicy you prefer it
~~🔆Instructions:
1. Firstly add the onion with a bit of olive oil, then the peppers.
2. Add the tomatoes 🍅 (or tomato sauce), chickpeas, red beans, already boiled quinoa (here you can add what beans you have and prefer ❣️)
3. Cook for 10 minutes.
4. Add the jalapeño peppers, garlic powder and chili flakes – depending how spicy you like it 🔥
5. Leave it for about 3-5 minutes (to better combine the tastes)
6. After turning the stove off, you can add the parsley and it’s done ✅.
7. Enjoy it warm with some vegan sour cream (or regular one if you can tolerate it)! 🤗♥️
I like adding quinoa to my meals, because it is one of my favourite super foods 😍. It contains Magnesium, B vitamins, Potassium, Iron, Calcium, Phosphorus, Vitamin E. It is loaded with nutrients and fiber!!
