Day 28 Of Rice Paper Challenge!
Looking for a new recipe to try? Look no further! Our subscriber suggested the Egg Rice Paper Roll, and we couldn’t wait to give it a go. Join us as we experiment with flavors and share the results with you.

Ingredients:
– 1 rice paper sheet
– 1 egg
– Capsicum and onion (sliced long)
– Salt, red chili sauce, soy sauce, and oregano (for the filling)
– Mayonnaise
– Cheese
– Cooking oil

Instructions:

1. Heat a pan and add some oil.

2. Place a rice paper sheet on the pan.

3. Crack an egg directly onto the rice paper and whisk it, creating a rice paper omelette base. Cook until the omelette is set. Remove from the pan and set aside.

4. In the same pan, add more oil if needed and stir-fry the sliced capsicum and onion until they are cooked to your liking.

5. Season the filling with salt, red chili sauce, soy sauce, and oregano.

6. Assemble the rice paper egg roll: Spread mayonnaise over the rice paper omelette base.

7. Add the cooked filling on top of the mayonnaise.

8. Sprinkle cheese over the filling.

9. Carefully roll up the rice paper to form the egg roll, ensuring the filling is enclosed.

10. Slice the roll into portions and serve. Enjoy your flavorful rice paper egg rolls with a cooked filling!
