INGREDIENTS
– 1 Tbsp. olive oil
– 1 Large Onion, chopped
– 4 Cloves of garlic, chopped
– 2 Jalapeno pepper, seeded and chopped
– 1 1/2 lb. Lean ground beef
– 28 oz can Whole tomatoes
– 18 oz can Red kidney beans, drained and rinsed
– 3/4 Tbsp. Chili powder
– 3/4 tbsp Crushed red pepper flakes
– 2 tsp. Cumin
– 2 tsp. Dried oregano
– 1 tsp. Paprika
– 2 tsp. Salt
OPTIONAL: Cheese for topping
METHOD
1. Chop garlic, onion, and jalapeños.
2. In large pot, heat olive oil over medium-high heat. Add onion and garlic to large pot and cook for 2 minutes.
3. Add minced beef to the pot. Cook until the meat is browned, stirring to break up large pieces.
4. Add tomatoes, beans, and spices.
5. Bring to a boil, then reduce heat to low.
6. Cover.
7. Let simmer for 1 hour, stirring occasionally.
8. Serve while hot, add cheddar as a topping (optional).
