In this video i’ll teach you how to make paratha. Paratha is a well known dish in many countries like India, Pakistan , Sri Lanka but also famous in Afghanistan. The dough layered as you can see at the end of the film. And there are so many variations: laccha paratha, aloo paratha, churchur paratha etc. A cong you bing, also known as a scallion pancake, is a Chinese, savory, unleavened flatbread folded with oil and minced scallions. So there are many names for the same dish.
But most important it’s very easy to make it and i show you a vegan and vegetarian option.

Ingredients:
500 gr flour
10 gr salt
50 gr spring onions
10 gr red chili pepper
2 gr garlic
280 ml water
100 ml butter or oil

Method:
Mix flour and salt together on a clean work surface. Slowly mix water, a few tablespoons at a time, into flour mixture until dough is smooth and easy to handle. Knead dough for 10 minutes. Place the ball of dough in a large bowl, cover with damp cloth and let rest for 30 minutes.

Divide the dough in 10 pieces. Sprinkle a little bit flour on the work surface. Roll each piece of dough into a small ball and then roll out into thin circle.

In a bowl mix the spring onions, garlic and red chili pepper together

Spread oil or butter on the circle and divide two 2 tsp of the mix on the dough. Then roll it up. Then fold this roll again into a circle and put the end of the dough under the circle

Now you can roll out the paratha into a flat circle of 1 cm thick
Preheat a frying pan and melt butter or oil and fry them light brown

Serve with yogurt (mix it with garlic and dried mint) or chakny (a dip made of fresh coriander, salt, tomatoes and lemon juice)

Garnish with fresh peppers and a few leaves of choice.
