Ingredients
Prep Time: 20 minutes
Cook Time: 40 Mins, Low to Medium Heat
1 lb ground beef (80/20)
1 lb ground turkey (85/15) leaner works too but it will taste a little different
1 – 10 oz can of Mild Rotel (can swap out for 16 oz diced tomatoes if you canāt find, just wonāt be as spicy)
1 – 16 oz can of diced tomatoes
1 – 16 oz can of black beans (if youāre looking for a really low carb option, omit)
1 large onion, diced
5 cloves garlic, minced
1 can of Chipotle chili in adobo sauce (3-5 chilis chopped plus 3 tbl of the adobo sauce)
1 cup beef broth (I used better than bullion)
1 lime
1 tbl oregano
1 + 1/2 tbl chili powder
2 tsp cumin
1/4 tsp cloves
1 tsp of salt (and more to taste)
1 tsp pepper (and more to taste)
2 tbl olive oil
Toppings (optional) : Sweet corn, green onions, shredded cheese, or sour cream.
