Madeleine’s Kitchen: Quarantine Edition – 3 Bean Chili – Vegan & Easy to Make!

Simple Meals for Uncertain Times

Ingredients:

1 onion chopped
3 cans of beans (any kind will do)
Add salt to taste
1 tbsp chili powder
1 tbsp cumin
1/2 teaspoon garlic powder (or 1/2 tbsp if you love garlic)
1lb can of tomatoes (peeled, chopped, whole – again, whatever you like!)
1/2 cup vegetable stock

Instructions:

In a warm pot, add oil, chopped onion, 3 cans of rinsed beans. Stir in seasonings. Add canned tomatoes and let cook for 15 minutes or so. Once the chili has thickened up, add 1/2 cup veggie stock and mix well. Cover and let simmer until your rice is done. Add some Sriracha on top for an extra kick.
