I used to eat Wendy’s Chili. I only had it plain in the bowl once, but I did have it on the baked potato. They are the only fast food restaurant, that I know of, where you can just get a bowl of chili. It is perfect for the Winter time and even more perfect to whip up at home. So, that is what we will do today; Homemade Wendy’s Chili.

Homemade Wendy’s Chili Recipe
Ingredients:
2 16 ounce cans of kidney beans
1 24 ounce jar of pasta sauce
2 cups vegetable broth
1 bell pepper, diced
4 tablespoons chili related spices
(chili powder, cumin, onion, garlic, etc, I used a blend)
2 cups ground beef mix (recipe below)
Directions:
Put a large pot over high heat. Add in kidney beans, pasta sauce, vegetable broth, diced bell peppers, chili spices, and ground beef mix.
Bring to a boil, stir it, then allow to simmer for 30 minutes. But don’t leave it the whole time, you will have to stir is every once and awhile.
Serve it up hot.
Ground Beef Recipe
Attribution: One Green Planet – Meaty Veg-Based Ground Meat
Ingredients:
1 medium head of cauliflower (just the florets)
2 cups raw walnuts
2 cloves of garlic
2 tablespoons olive oil
2 tablespoons soy sauce
2 teaspoons liquid smoke
1/2 teaspoon salt
2 teaspoons Mexican/taco seasoning (Mrs. Dash Southwest Chipotle Seasoning Blend)
Direction:
Preheat the oven to 350 degrees and spray a baking sheet with non-stick cooking spray.
Place the cauliflower, walnuts, and garlic in the food processor and blend. Depending on the grain you like determines how long you should blend.
Pour the cauliflower mixture into a large bowl and stir in the olive oil, soy sauce, liquid smoke, salt, and Mexican/taco seasoning. Stir until you can no longer find unseasoned whit clumps of cauliflower.
Spread the mixture onto the baking sheet in an even layer.
Bake for 45 minutes to 1 hour, returning every 15 minutes to stir and redistribute.
The ground beef is done baking when it is dry, browned, and forms separate clusters.
