Touch Down Chili
1 Can black beans (12 Oz)
2 Cans Hominy (12 Oz)
2 Cans chili hot beans (12 Oz)
1 Can kidney beans (12 Oz)
2 Cans corn (12 Oz)
2 Cans diced tomatoes (12 Oz)
2 – vegan hot chili seasoning packets (1.25Oz)
2- 32 liquid Oz. Vegetable broth
Optional: 1 bag of vegan Fritos for topping
3 small zucchini
1 large onion
1 large jalapeño pepper
Cilantro for garnish

-Heat pan + vegetable oil on medium high heat
-Add diced onions (cook until translucent)
-Add diced peppers, zucchini, and seasoning mix and mix together
-Add some of the vegetable broth to prevent onions from burning & begin adding the canned ingredients
-Add all canned ingredients in no particular order. Followed by the rest of the vegetable broth
-Add one cup of water (if not enough fluid for you)
-Add chopped cilantro (save some for garnish) and simmer on medium heat for 15 mins
Finally, taste and serve w/ Fritos. Enjoy!

Vegan Hummus Pasta

1 medium onion
1 cup mushrooms
1 Can chick peas
1 cup frozen kale
1/2 cup diced sweet tomatoes
3 – 4 tbsp hummus (of your choice)
1 large glove garlic

Dice all ingredients and open bean can
-cook pasta in advance
-heat pan + vegetable oil on medium high heat
-add crushed garlic and onion (cooked until translucent)
-add mushrooms, kale, and chick peas to the mix followed by 3 tbsp of your favorite hummus (we used hot pepper hummus).
-mix all ingredients into a creamy sauce & add pasta (start w/ small amount of pasta and add the rest when you are satisfied w/ the cause to pasta ratio).
-mix everything & simmer on low hear for about 5 minutes & serve w/ fresh diced sweet tomatoes. Enjoy!
