Chicken Tikka
Ingredients:
Chicken boneless – 300 grams
For marination:
Hung curd – 3 tbsp
Ginger & garlic paste – 1 tbsp
Lemon juice – 1 tbsp
Gram flour (roasted) – 2 tbsp
Red chili powder – 1 tsp
Kashmiri chili powder – 1 tsp
Coriander powder – 1 tsp
Cumin powder – 1/2 tsp
Pepper powder – 1/2 tsp
Chaat masala powder – 1/2 tsp
Garam masala powder – 1 tsp
Turmeric powder – 1/4 tsp
Salt as required
Mustard oil – 2 tbsp
Oil – 2 tbsp
For Grilling:
Oil – 2tbsp
Charcoal piece – 1
Instruction:
Marination:
1. Wash and clean the chicken, and cut it into cubes for threading on skewers.
2. Take a large mixing bowl, add in curd, ginger garlic paste, lemon juice, roasted gram flour, red chili powder, kashmiri chili powder, coriander powder, cumin powder, pepper powder, chaat masala powder, garam masala powder, turmeric powder, salt and mustard oil.
3. Mix all the ingredients well.
4. Place the chicken in the bowl with the marinade, and marinate at least an hour, preferably 4-6 hours in refrigerator.
5. Meanwhile, soak bamboo skewers in water for 30 minutes.
6. Take the chicken marinade out.
7. Thread chicken pieces onto skewers.
Chicken Tikka:
8. Heat oil in a pan with high flame and place chicken skewers on the pan.
9. Cook chicken for 1 min on high flame. Flip the chicken skewer carefully and cook for 1 min on each side.
10. Keep turning and cook each side for 5 – 7 minutes on low flame until each side of the chicken is cooked well.
11. Apply the leftover masala all over the chicken pieces.
12. When all the sides of the chicken tikka sticks are done well switch off the flame.
13. To get a smoky flavor, burn a small piece of charcoal and place it in a small foil cup/steel bowl and pour some ghee onto the burning coal.
14. Cover with a lid. Allow it to smoke for 5 minutes.
15. Remove the foil cup.
16. Smoky flavor Chicken Tikka is ready serve with lime wedges, onion and mint chutney.
16.Squeeze the lemon wedges on chicken pieces, along with some onions and dip it into mint chutney….and a bite… Yum!!
