Cooking with Alice Episode 2: Grandmas Chicken Chili Cups

Chicken Chili Cups

What you’ll need:
1.5lbs cooked chicken, diced
1 bell pepper, any color, diced
1 jalapeno, seeded and diced
1/2 yellow onion, diced
1/2 bunch parsley, minced
3 green onions, thinly sliced
1 stick butter, melted
16oz sour cream
1 egg
1 packet ranch seasoning mix
8oz package of shredded cheese, any kind
1 package wonton wrappers (at least 24 count)
Salt
Pepper
Fajita seasoning or any zesty seasoning blend

Large mixing bowl
Small mixing bowl
Cupcake pan
Whisk
Pastry brush
Large and small spoon

Preheat oven to 400°F

Brush cupcake tin with butter. Place wonton wrappers on cupcake tin. Brush wonton wrappers with butter. Bake 5-7 minutes until just golden and slightly crispy. Allow to cool.

In large bowl, combine chicken, peppers, onion, and parsley.

In small bowl, combine sour cream, egg, and ranch seasoning.

Add sour cream mixture to chicken mixture. Season liberally with salt, pepper, and a pinch of zesty seasoning blend. Mix thoroughly.

Fill wonton cups with chicken mixture. Top with cheese. Sprinkle fajita seasoning on top.

Bake approximately 15 minutes, until cheese is melted and centers are warm and slightly bubbly.

Serve topped with sliced green onions.

Makes approximately 2 dozen cups.
