This “one fits all” low sodium sauce is made with low potassium red bell peppers and beats any tomato sauce in taste! You can freeze it or use for pasta and other recipes to replace a tomato-based sauce. Developed for low sodium diet and chronic kidney disease.
RED BELL PEPPER SAUCE
Makes 2 cups
25 minutes preparation time
INGREDIENTS:
1/3 cup olive oil
4 cloves garlic
3/4 cup onion chopped
2 cups red bell pepper seeded and chopped
1/2 cup tomatoes diced
1/2 teaspoon crushed chili pepper
2 teaspoons lemon zest (1 lemon)
1/2 cup water
2/3 cup fresh basil chopped (or 3 tablespoons dried basil)

I simply cannot thank you enough for this channel! Most only tell what veggies and meats are approved to eat and not how to cook or what to make with those veggies. I have bought renal diet cookbooks and it was a waste of money as the recipes were too expensive and looked unappetizing. Cherry tomatoes are on the list given to me by the dietician for us to use as a guide. I often substitute regular tomatoes for cherry tomatoes.
I need a red pepper sauce minus tomatoes
The purpose of a red bell pepper sauce is to take the place of tomato sauce.
I added salt though…..but thank you, this was so delicious with pasta.
Onions are high in phosphorus 😢
