Pumpkin 3 Ways, Chili, Parfait and Pizza. Prednisone / Steroid Friendly Recipes

Low Sodium, low sugar, low oil & low calories. *Prednisone friendly recipe/ Corticosteroid food.
Pumpkin Chili

1 cup soaked hominy
1 tomato diced
1/2 onion diced
1 jalapeno cleaned and diced
1 container of beno red chili an green chili (found in freezer with SouthWestern food)
1 tsp chopped garlic
2 Tbsp canned pumpkin
1 can pinto beans
1 tsp cilantro
Seasoning blend 1tsp garlic powder, onion powder, cumin, and paprika
1 Tbsp of dark chili powder

Directions
Take 1st seven ingredients and add to crockpot or instapot, cook about 4 hours. Now add pumpkin cilantro and beans, cook 30 to 45 mins longer and enjoy
Serves 4

Pumpkin Parfait

1/2 cup Greek yogurt
2 drops vanilla
1/3 cup pumpkin
2 Tbsp of maple syrup
Pinch of pumpkin spice
Pinch of ginger
1/4 cup granola cereal
1/4 cup pecans (optional)

Directions
Place yogurt and pumpkin in separate bowls add maple syrup and mix. Layer pumpkin, yogurt, granola and garnish with toasted pecans.
NOTE: Toasted pecans with tsp of sugar and let cool before garnishing.
Serving size 1 large or 2 small

Pumpkin Pizza

1 premade dough or flatbread
3/4 cup pumpkin
1 Tbsp olive oil
2 Tbsp tomato paste
1 tsp Italian herb
1 Tbsp chopped garlic
1/4 cup artichokes or small jar
1/4 cup roasted red peppers (out of jar)
5 olives
6 cherry tomatoes cut in half
1/2 cup mozzarella
4 fresh mozzarella balls

Sauce
Saute garlic in olive oil add pumpkin, tomato paste and herbs. Heat on medium low while stirring constantly until warm throughout.

Pizza build
Dough, sauce, vegetables and cheese.
In oven preheated to 400* bake 10 minutes.
Garnish with salad.

Garnish
1 1/2 baby kale
1 1/2 cup baby spinach
1 tsp olive oil
1 squirt of lemon juice
Mix

Makes a 12 inch pizza
