I used to eat at this souvlaki place when I was a kid. The guys wife was Mexican. They started making habanero hot sauce available with souvlaki dinner. Tzatziki and habanero hot sauce is an amazing combo. Try it

You should get some fusion going. Some random ideas:
-Swap feta and queso fresco. Similar texture, different taste.
-Swap Greek oregano and Mexican oregano. Technically it’s not oregano, just has a similar flavor.
-Spanakopita with nopales in place of spinach.
-Spinach and feta tacos, kind of a “rajas con crema” with different ingredients.
-Saganaki flaming cheese tostadas
-Baklava with…well, nothing. As much as I love Mexican cuisine, IMO baklava is the greatest dessert of all time 🙂
