5 MINUTE CHILI RECIPE | Plant Based & Delicious

Quick & Easy Chili Recipe

Ingredients:
1 Tbsp. olive oil (avocado, coconut, or canola oil also work)
1 cup of pre-cut mixed veggies or 1 cup frozen mixed veggies (broccoli, onions, celery, carrots, peppers etc.)
1 can of chickpeas-drained and rinsed
½ jar of sauce
â…› tsp. Cayenne powder
â…› tsp. Chili powder
â…› tsp. Cumin
â…› tsp. Paprika
â…› tsp. Garlic powder
â…› tsp. Onion powder
â…› tsp. Pepper
½ cup fresh spinach

Directions:
Heat skillet to medium high heat & add oil to pan.
Add mixed veggies to pan and heat until warmed (this will take longer for frozen veggies)
Add chickpeas after draining and rinsing in colander (to reduce sodium content)
Add in sauce
Measure & add spices (Avoid cayenne & chili if you don’t like spicy flavors)
Top with fresh spinach and mix in. Turn off heat and enjoy!
Optional: top with plain coconut yogurt in place of sour cream
