Palak kura, or spinach curry, is a popular South Indian dish. Here’s a simple recipe for making it:
Ingredients:
4 cups fresh spinach leaves, washed and chopped
2-3 green chilies, chopped (adjust according to your spice preference)
2-3 cloves garlic, minced
1 tomato, chopped
1/2 teaspoon turmeric powder
1 teaspoon red chili powder (adjust to taste)
Salt to taste
1 tablespoon oil
1/2 teaspoon mustard seeds
1/2 teaspoon cumin seeds
A pinch of asafoetida (hing)
Few curry leaves (optional)
1 tablespoon grated coconut (optional, for garnish)
Instructions:
Prepare Spinach: Wash the spinach leaves thoroughly and chop them finely.
Sauté Aromatics: Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds. When they start spluttering, add minced garlic,, and green chilies. Sauté for a minute.
Add Onions and Tomatoes: Add chopped onions and sauté until they turn translucent. Then, add chopped tomatoes and cook until they turn mushy.
Add Spinach: Add the chopped spinach leaves to the pan. Mix well with the onion-tomato mixture. Cook covered for a few minutes until the spinach wilts down.
Seasoning: Add turmeric powder, red chili powder, and salt to taste. Mix well and cook for another couple of minutes.
Finish: Once the spinach is cooked and the flavors have melded together, turn off the heat.
Garnish: Optionally, garnish with freshly grated coconut for added flavor and texture.
