Should I be fine to use this for ceviche?


In the past I’ve normally just used precooked shrimp from Costco. But shouldn’t I be fine to use this uncooked shrimp? I don’t need sashimi grade fish do I?

I know the lime/lemon juice cooks the fish, so most recipes use uncooked shrimp. That all makes sense, but I see many recipes saying you need sashimi grade fish which doesn’t seem right.
