Bombay Biryani:
Ingredients:
Chicken ½ kg
Sela rice 3 cups
Food color ¼ tsp
Oil ½ cup
Salt 1 tsp
Garlic 1 tbsp
Ginger 1 tbsp
Onion sliced 2 large
Potato in large cubes 3
Mint 5 tbsp
Screw pine ½ Cup
Coriander powder 2 tbsp
Whole all spices 2 tbsp
Yogurt 2 cups
Tomatoes 2-3
Chili powder 1 tbsp
Turmeric 1 tsp
Dry Plum 8
Khewra food essence ½ cup
Method:
⢠Heat oil in a pan and add onions, garlic, ginger and fry.
⢠Add chicken and potatoes and let it cook on low flame for until the chicken is almost done.
⢠Add in 3 tomatoes, whole all spices,coriander powder, red chili powder,turmeric,dry plump and food color.
⢠Mix it alland let it cook for 5 minutes on high flame.
⢠The add yogurt and salt.Cover it and cook on low heat for 10 minutes.
⢠Remove the lid and lower the heat.
⢠Add khewra, 1 diced tomato, mint leaves and mix it.
⢠Add boiled rice and food color on the top.
⢠Let it simmer and then shift the pan on a preheated tawa and leave it for 15 minutes.
⢠Mix it and serve it.
Lahori Chicken Karahi :
Ingredients:
Chicken 750g
Butter ½ cup
Oil ½ cup
Chopped Onions 1
Tomatoes 250g
Green chili 6-7
Red chili 8-10
Salt 1-1/2tsp
Crushed Black pepper 1tsp
Black pepper powder 1tsp
Yogurt 2 tbsp
Yogurt ½ Cup
Cumin powder 1-1/2tsp
Ginger garlic paste 1tbsp
All spicepowder ¾ tsp
Chopped Ginger& coriander for garnishing
Lemon juice 1tbsp
Method:
Heat oil and fry onions. Now add tomato, ginger garlic paste, salt and black pepper powder and roast them. Mix chicken with yogurt. When the spices are roasting add whole red chili and the rest of the yogurt and the chicken to roast. Then add half cup of water and cover the pan and cook it on medium flame till the chicken tenders and then roast it. With it add cumin powder,all spices, black pepper chopped, green chili, some chopped ginger, coriander and lemon juice and set it to simmer. Lastly set it on a dish and garnish it with chopped ginger and coriander and serve.
Pineapple SoufflƩ:
Ingredients:
Pineapple 1cup
Pineapple jelly crystals 1packet
China grass ¾ tsp
Cream 1packet
Condensed milk ½ tin
Glaze cherries for garnishing
Whipped cream for garnishing
Method:
Finely cut the pineapples. Cook the jelly in water and when it starts to get set then add china grass, cream, condensed milk and pineapple pieces to mix it thoroughly. Then cool it in a dish. When it sets garnish it with cream. Lastly add pineapple, whipped cream and glaze cherries to garnish and serve it cold.
Shreded Chicken Cutlets:
Ingredients:
Chicken (shredded) 2cup
Potatoes (boiled) 2 cup
Fresh coriander (chopped) ½ bunch
Green chili 2-3
Tartaric powder 1 tbsp
Salt As per requirement
Chopped red chili 1 ½ tsp
All spices powder 1/2tsp
Butter 2 tbsp
Eggs 2
Breadcrumbs 2cup
Coal 1
Oil 2 tsp
Method:
⢠First heat butter in a pan and add green chilies.
⢠Then add shredded chicken, all spices powder, tartaric powder, crushed red chilies and green coriander.
⢠Mix them and take it out in a bowl.
⢠Smoke it with coal and set it room temperature.
⢠Then add and mix the boiled and mashed potatoes to make cutlets.
⢠Then dip them in the whipped eggs and breadcrumbs to fry them.
⢠Serve it with cucumber, tomatoes and lettuce leaf.
