Ingredients:
1 whole chicken, cut into pieces
1 tbsp salt
1 tbsp garlic paste
1 tbsp ginger paste
2 tbsp coarsely crushed black peppercorns
1/2 cup oil
1 tbsp ghee
3 whole green chilis
Freshly sliced green chilis (for garnish)
Fresh coriander (for garnish)
Fresh ginger slivers (for garnish)
Instructions:
Marinate the Chicken:
In a bowl, combine 1 tbsp salt, 1 tbsp garlic paste, 1 tbsp ginger paste, and 2 tbsp coarsely crushed black peppercorns.
Add the chicken pieces and mix thoroughly. There’s no need to marinate for long.
Cook the Chicken:
In a high-heated pan, add 1/2 cup oil and 1 tbsp ghee. Allow the oils to melt and reach a sizzling high temperature.
Add the marinated chicken into the pan. Hear that delightful sizzle! Cook on high heat, moving the chicken around to prevent burning.
Add Green Chilis:
After 5 minutes, once the chicken has a lovely golden colour, add 3 whole green chilis. Keep them whole for a milder heat, or chop them into pieces for a fiery kick.
Continue frying the chicken, covering with a lid every few minutes and reducing the heat to medium to ensure the inside cooks through and becomes tender. Repeat this about 4 times. Total cooking time should be around 15 minutes, depending on the size of your chicken pieces. Smaller pieces cook quicker. Using bone-in chicken for maximum flavour, but boneless chicken tikkas will cook in about 10 minutes.
Adjust Oil:
Once the chicken is cooked to perfection, remove most of the excess oil, keeping some for flavour.
Garnish and Serve:
Garnish with freshly sliced green chilis, a generous handful of vibrant coriander, and delicate slivers of fresh ginger.
No need to order that takeaway—you can whip this up quicker than it would take to arrive, and you’ll know exactly what has gone into your dish. It’s not just fast; it’s fabulous and homemade! Best served with warm naan or even better with Paratha.
