
Sorry if this is a dumb question. My local panadería only has these every once in a while and I’m not sure what it’s called. It’s a super soft sweet bread with a thicker craquelin on top. The dough itself is a little denser than their concha and the craquelin is way thicker and harder with a strong piloncillo & cinnamon flavor.
My gut says “it’s just another type of concha” but I tried to ask them about it once and ended up stumbling around trying to explain the pastry. Thanks for the help!
