Do Enchiladas need to be baked?


Wikipedia's entry on enchiladas says nothing about being cooked or baked. Effectively it just says a corn torilla with sauce on it = an enchilada. On the other hand I'm not finding any recipes that aren't at least in some way heated.

Is there a consensus on this? I was at Old Town Mexican Cafe in San Diego and they served an unbaked chicken verde enchilada. It was a cold rolled corn torilla with chicken inside and salsa verde on top.
