Mole is always hit or miss for me. Sometimes its so bland, but doing it like this with cotija, onions, Mccormicks lime mayo and avacado on it sounds bomb. How was it?

It is a wonderful combination, especially with onion and crema. When I was in secondary school, they used to sell these for lunch. Man, you had to fight your way to be there first… so bloody delicious.
