What’s up guys? Today we’re making a beef chili garlic noodle. It comes together in under 20 minutes. It’s packed with flavor and is super cost-effective which I love for a big family like mine. This is on a monthly rotation in my home and once you try it you’ll see why. Now if you like this recipe don’t forget to hit that like and subscribe button. Now let’s get to it. Bring a large pot of water to boil. Add in salt and the fettuccine and cook until al dente. Once done make sure to reserve one cup of the pasta water. I’m using lots of garlic in this recipe so I’ve got my friend Frank here to help me out. Makes things so much easier. Some of the garlic will be used in the sauce and the rest while cooking the meat. I’m using both the green and white parts of the onion so you’ll want to chop them separately and set aside. In a large skillet on medium-high heat, add in your oil and heat for about two minutes. Then add in the white part of your onions and saute for about a minute. Add in a teaspoon of the crushed garlic and saute for another minute. I’m using lean ground beef but you can also use ground chicken or turkey or even tofu. Add in some garlic powder, salt, and black pepper and make sure not to over salt. The soy sauce and cheese provide plenty of salt and you can always add more at the end if needed. You’ll cook this until nice and browned. For our chili garlic sauce we’ve got soy sauce, oyster sauce, the rest of our garlic, crunchy garlic chili oil, some sriracha, and brown sugar. You’ll combine it and while you’re combining heat your sesame oil stove top until nice and hot about two to three minutes. You’ll then add it into your sauce and give it a mix. This is where you can taste to see if you want it a little more spicy. It’s better to start on the conservative end. Add your noodles back to the pan along with the sauce on low heat and give that a really really good mix. Once your noodles are fully combined and covered in the sauce you can go ahead and add in the grated parmesan cheese or pecorino would work just as well. I’ve used both and it’s delicious. You’re then going to add in your reserved pasta water a little at a time until you reach your desired consistency. I used about half a cup and then I reserved the other half a cup for when I was reheating. Top with scallions and you’re ready to serve. To plate I like to start with a generous amount of pasta of course and then top with some more green onions, some sesame seeds, some more of my grated parmesan, and some chili garlic oil. Et voila, let’s dig in and see how this tastes. This looks so good! Look at that! So delicious! It’s just the right amount of spice. You can add more if you like it more spicy. It’s filled with umami flavors. That parmesan cheese makes it so delicious. You’re gonna love it. Let me know how you like it in the comments.
