This a fun dish to make. These eggs are super flavorful; they’re covered in spices and fried in oil. Even if you don’t have any special Chinese ingredients to hand for the moment, you can still try this. low carb egg stir-fry with ginger and soy sauce stir-fry – ready in just ten minutes.
INGREDIENTS:
Boiled eggs-3
Corn flour- 1cup
Refined flour- half cup
Bell peppers- 20 grams each
Spring onion whites- 2tbsp
Spring onion green- 2tbsp
Green chilies- 1
Chopped ginger 2tbsp-
Chopped garlic- 2tbsp
Soy sauce- 10ml
Red chili sauce- 30ml
Tomato ketchup- 20ml
Salt and pepper to taste
Oil for frying
Water as required
METHOD:
Cut the boiled eggs in quarters. Make a batter of flour, cornflour, salt, pepper, water. Now add the eggs to the batter and fry them until golden brown. For the sauce add 2tbsp of oil in a pan add ginger and cook for 1 minute. Now add garlic and green chilies and cook for 2-3 minutes. Add bell peppers and spring onions and cook further for 2 minutes. Add the soy sauce and chili sauce toss well. Now add eggs and ketchup and toss well. Let it cook for 1 minute. Adjust the seasoning and serve hot with rice or as it is.
