Cuisineur Prime 32cm Wok – Recipe Sharing : Cooking Chili Crab

Chilli Crab Cuisineur

Ingredients :
4 big crabs, cleaned and cut into 4
3 tbsp chilli sauce
1 1/2 tbsp vinegar
Sugar and salt, to taste
1 cup of water
2 eggs, beaten

Blended ingredients
8 shallots
6 red chillies
1 inch belachan
2 candlenuts
4 cloves garlic
1inch ginger

Sliced scallions, fresh red chillies and fried shallots for garnishing

Methods :
1. In the Cuisineur 32cm wok, fry the crab with some oil til it turns red. Remove crab, drain excess oil. Leave just enough oil to saute the other ingredients.
2. Saute the blended ingredients till fragrant and cooked through. Add in all other ingredients except the eggs and simmer till the gravy thickens a little.
3. Pour in the beaten eggs from the edge of the wok and mix through. Ensure that the gravy coats the pieces of crab.
4. Garnish with scallions, red chillies and fried shallots.
