I might do these peppers for brats at the lake instead of just doing the peppers on the grill. They should be excellent with eggs.

I have a Romanian/Hungarian background and so I make a a very similar dish called letcho (pron. leh-cho) but without garlic or basil, which is your Italian touch. I add a few more tomatoes and salt to taste and make it as a side dish. Very similar and also delicious.
I enjoy eating them raw. They are always chrunchy and full of juice
